It doesn’t get more comforting than a classic PB&J. Whenever we’re stressed, it’s the first thing we whip up, which got us thinking that it was time we put a kencko spin on it. Right off the bat, we knew that we wanted kencko purple to be the star of the show. Packed with a trio of our favorite berries, strawberries, blueberries and blackberries, plus banana of course, purple is ideal when you’re feeling stressed. The berries contain natural compounds that calm inflammation and aid good digestion.

To level up our PB&J, we decided to make a quick chia jam. To the base of purples, we added the secret ingredient, chia seeds. When you combine chia seeds with liquid they expand to create a gelatinous, jello-like texture that’s perfect for jam. Thanks to the chia seeds, you don’t need to add as much sugar to hold the jam together, although we like to still add a splash of liquid sweetener.

Our favorite way to use the jam is on a classic PB&J, but you don’t have to stop there. It’s great dolloped into yogurt, stirred into overnight oats or just eaten straight out of the jar when you need a quick hit of fruity flavor.

This recipe takes just 10 minutes to prepare before leaving it to cool in the fridge.

Ingredients

1 packet of kencko purples

10 oz of water (1 kencko bottle)

2 tbsp of chia seeds

1 tbsp of liquid sweetener (maple syrup is our personal favorite)

Optional squeeze of lemon

Instructions

Shake up your kencko with water, and then pour it into a saucepan over a medium heat, stirring occasionally.

Once the smoothie shows the first signs of being about to boil, turn the heat down to low/medium and add in the chia seeds, liquid sweetener, and, if you’re using it, the lemon.

Stir everything together thoroughly to make sure the chia seeds are evenly distributed.

Let it simmer for 5-10 mins on low/medium heat, stirring every now and then to make sure the chia seeds aren’t sticking together.

Once the jam starts to thicken, remove it from the heat and let it cool in the fridge. (Sorry, you will have to be patient!)

Once it’s cooled, use it as a jam for sandwiches, charcuterie, toast, and whatever else you enjoy!
