REDS SMOOTHIE
We’re always looking for new ways to incorporate our reds smoothie into our day because it really is that good. You get four of our fruity favorites in every packet – strawberries, banana, apple and raspberries – plus sweetness from the date and a hint of heat from the ginger. Our newest way to sneak reds (and chocolate!) into our day are these frozen chocolate covered bananas.
Bananas are ubiquitous for a reason – they’re delicious. Creamy and slightly sweet, when they’re frozen they have an almost ice-creamy texture. But we’ll be straight with you, these frozen chocolate covered bananas aren’t ice creams. If you want ice cream, eat ice cream. But if you want something sweet, with a dose of nutrition too, these are perfect.
Our favorite part of making these is the decoration. We like to really go wild and pretend we’re in a fancy popsicle shop, but decorate as lavishly (or un-lavishly!) as you like. If you’re going to pick just one topping, freeze-dried berries just give it a proper fancy feel.
This recipe takes 15 minutes to prepare before leaving them to set in the freezer.
Ingredients
4 bananas
6 oz dark and/or white chocolate
1 tbsp coconut milk
1 packet kencko reds
Optional: freezed dried strawberries, coconut flakes, chopped nuts, for decorating
Instructions
Peel your bananas, and slice the end off to your desired size. Insert a popsicle stick into the base.
Place your bananas on a baking sheet lined with parchment paper, and freeze them until they’re solid. The easiest way to do this is just to pop them in before bed.
Once the bananas are frozen, melt your chocolate. You could do this in the microwave but you’ll get a better result if you do it over the stove. Fill a small saucepan with an inch of water, and bring it to a boil over medium-high heat. Add your chocolate and coconut milk to a heat-safe bowl that will fit snugly over the top of the pan. Place the bowl on top of the pan and let the steam melt the chocolate. Stir until smooth. If you’re using a mix of white and dark chocolate, you’ll want to melt each chocolate separately.
Once the chocolate is melted, pour in your kencko reds and stir until it’s fully incorporated. If you’re using white chocolate, it should turn a lovely pink color.
Now for the fun part: Dip your frozen bananas in the melted chocolate, and sprinkle them with your choice of toppings.
Return the bananas to the baking sheet and refreeze until the chocolate has hardened.
Take out the freezer to soften 5 minutes before you want to eat them. Enjoy!
