BREAKFAST
REDS SMOOTHIES
Whatever your parents might have told you, chocolate can be part of a nourishing breakfast that is good for your body and your soul. Just don’t blame us if they don’t appreciate being told they were wrong! Our chocolate cherry chia pudding is loaded with fiber and nutrients meaning it’s just as good for breakfast as it is for dessert. Our berry-packed reds smoothie is the base of this recipe, not only is it full of immune-boosting properties, but berries and chocolate are always a winning combo.
kencko reds already contains chia seeds, so for this recipe, we decided to make them the star of the show. Chia seeds are a nutritional powerhouse. But they’re also… well, really cool. When soaked in a liquid, they take on a sort of jello meets mousse texture that makes for a creamy, satisfying breakfast or dessert. We’ve added cocoa powder for that chocolatey hit and just a splash of maple syrup to bring it all together.
Before eating, we like to top it off with more berries, like sliced cherries and strawberries, along with some goodies like chocolate shavings and almond slivers for a decadent but nutritious option. Who says you can’t have your pudding and eat it, too?
This recipe takes just 5 minutes to prepare before resting in the fridge overnight.
Ingredients
½ packet of kencko reds
4 tbsp of chia seeds
1 tbsp of cocoa powder
½ tbsp of maple syrup
1 cup / 240 ml of plant milk
Toppings - we like sliced strawberries, sliced cherries, chocolate shavings, and/or shaved almonds or coconut flakes
Instructions
For the chocolate layer, mix 2 tbsp of the chia seeds, your cocoa powder, maple syrup and 1/2 cup plant milk together. You might need to stir it a few times over the course of five minutes to make sure the chia seeds distribute evenly.
Layer the mixture into the bottom of a jar.
For the strawberry layer, mix 2 tbsp of chia seeds, 1/2 packet of reds, and 1/2 cup plant milk together.
Spoon the chia mixture on top of the chocolate layer.
Refrigerate overnight (8ish hours).
In the morning, top with cherries and chocolate shavings. (We love adding strawberries and coconut flakes too!)
