Our kencko peaches smoothie is our go-to on sultry summer days. Imagine you’re eating your favorite peach pie, while sipping on a crisp ice tea – peaches tastes a lot like that. Sweet yet refreshing. Peaches, strawberries and dates provide that familiar sweetness, you get a hint of earthiness from sweet potato and carrot, a tanginess from rhubarb, and then we kicked up the nutrients even more with brown flax seeds and baobab.

For this recipe, we’ve bumped up the creaminess of peaches by turning it into a delicious end-of-summer chia seed pudding. You probably know by now that we’re big fans of chia seeds. Despite their tiny size, they’re packed with fiber and nutrients. But it’s their texture-transforming abilities that make them the coolest. When you add them to liquid, they expand and create an incredible, creamy, jello-like texture. In this recipe, we mix them with yogurt and oat milk to create a super satisfying pudding.

To really give this pudding that peach pie feel, we like to top it with fresh chopped peaches and a healthy handful of granola. Sprinkle on some hemp seeds for extra protein and coconut flakes for a tropical twist.

This recipe takes just 10 minutes to prepare before resting in the fridge.

Ingredients

1/4 cup chia seeds

1 packet of kencko peaches

1 cup of oat milk

2 tbsp of honey or maple syrup

1/4 tsp of vanilla extract

1/4 cup of coconut yogurt or another non-dairy yogurt of your choice

Toppings: chopped peaches, hemp seeds, coconut, or anything else you want!

Instructions

In a bowl, whisk the peaches packet with the oat milk, yogurt, the honey or maple syrup, and vanilla together until evenly combined and there are no clumps.

Add in the chia seeds and whisk again. You might need to whisk it a few times over the course of 5 minutes to get an even spread of chia seeds.

Pour the mixture into a jar and place in the fridge for at least 1 hour to thicken. Stay patient! The longer you leave it, the thicker the texture will be.

Remove the pudding from the fridge, add your toppings, and enjoy!
