While you might imagine we’re always bouncing off the walls at kencko HQ, we’re not immune to a mid-afternoon energy slump (we are human after all!). These no-bake energy bites are a perfect snack when you need a little boost, and they’re super easy to take with you on-the-go.

The base of this recipe is almonds, oats, dates, dried apricots and coconut oil. All good stuff. But things get really fun when it comes to customization. You can sprinkle the bites with any kencko flavor you like. When we’re looking for something tropical, we’ll go with yellows for its fresh pineapple-mango flavor. In the fall, we’ll go for our seasonal special pumpkin spice packet for a warm, cinnamon-y hit. And if we’re looking for something a little richer, mocha iced latte makes these taste like chocolate truffles. Sometimes, we’ll also sneak a pinch of cacao powder into the base.

Whatever combo you go for, these energy bites are packed with nutrients. The dried fruit and oats add fiber, and you get healthy fats from the almonds. We like to make a big batch at the weekend, and if we’re lucky they’ll last us at least until the middle of the week!

This recipe takes 10 minutes to prepare before placing it in the freezer to set.

Ingredients

100g of almonds (approx. 1 cup of ground almonds)

10 tbsp of gluten-free oats

12 dates

15 dried apricots

A pinch of salt

1 tbsp of coconut oil

1 - 2 packets of kencko smoothie of your choice

Instructions

Put all the ingredients into a food processor and process until well combined. You might need to scrape the sides of the processor a few times.

Dump the mixture into a bowl and roll it into balls. If you dip your hands in cold water, it’ll help prevent the mixture sticking to you.

Place the rolled balls onto a lined baking tray or into a lined container and place them in the freezer for 2-3 hours.

Remove them from the freezer and sprinkle them with your favorite kencko flavor. We like to divide the batch into two or three flavors as we can never decide on just one!
