GREENS SMOOTHIE
Every time we have kencko greens, we can’t help but feel a little bit like Popeye. And while we can’t promise our greens will give you superhuman strength, it is packed with nutrients and tastes delicious (which we suspect can’t be said for Popeye’s canned spinach). You get pineapple, banana, kiwi and kale in every packet as well as spinach, of course. It’s good anytime of day, but recently we’ve been enjoying greens as a post-workout boost in these green muffins.
Getting enough protein post-workout can feel like a chore, but these muffins make refueling a lot more fun. Thanks to the peanut flour, Greek yogurt and eggs, they’re packed with protein to aid with muscle recovery. And they taste damn good too.
A muffin isn’t a muffin in our opinion without chocolate chips so we added some on top as well as including cacao powder in the batter for a double-dose of chocolaty flavor. With these muffins waiting as a post-workout treat, you might just get some superhuman speed to finish up your workout before your family or friends have helped themselves.
This recipe takes 15 minutes to prepare plus 25 minutes of cooking time.
Ingredients
1 packet of kencko greens
1 cup of peanut flour
½ cup of cocoa powder
½ cup of sugar (white or brown both work)
1 tsp of baking powder
2 eggs
½ cup of nonfat Greek yogurt
1 cup of milk of choice
¼ cup dark chocolate chips for topping
Instructions
Mix the dry ingredients (the first 5 ingredients listed above) until fully combined.
Add in the rest of the ingredients, except the chocolate chips and mix well until combined.
Pour the batter into 12 lined cupcake tins and top with the chocolate chips. (We won’t tell anyone if you add more than listed!)
Bake at 350° F for 25 minutes or until a toothpick inserted comes out clean.
