Coffee. Chocolate. Cookies. Need we say more? These no-bake chocolate chip cookies are as delicious as they sound, thanks in large part to our mocha iced latte packet. Imagine Nesquik and an iced latte had a child and you’ll be pretty close to the flavor of this kencko favorite. It’s got depth from the coffee, but it’s still chocolatey and sweet.

Not only are these cookies packed with all the good stuff, they’re also no-bake, meaning they’re quick, easy and a favorite of ours on hot days when we want cookies but we really don’t want to turn on the oven. To keep them no-bake we chose oats as the base. We’re oat-heads here at kencko using these nutritional powerhouses in everything from oatmeal to flatbread recipes. Packed with fiber, they give these cookies a delicious chewy texture and hearty, nutty taste.

We’ve listed the chocolate as optional in the recipe because you could make them without the chocolate, but chocolate makes almost everything better, so you’ll find us adding a very generous sprinkle of chocolate chips whenever we make these at home.

This recipe takes just 15 minutes to prepare before leaving it to chill.

Ingredients

- 1/2 cup of almond butter

- 1/3 cup of maple syrup

- 1/4 cup of oat milk

- 1/4 cup of coconut oil

- 1 packet of mocha iced latte

- 1 tsp of vanilla

- 2 cups of oats

- Optional: ½ cup of dark chocolate chips

Instructions

Warm the almond butter, coconut oil, maple syrup, vanilla, oat milk, & packet of mocha iced latte over a low heat. Stir it regularly until it’s warm and starting to thicken.

Remove it from heat and stir in the oats. Mix until the oats are entirely coated and then add the chocolate chips (if using – but seriously, why wouldn’t you add chocolate chips?!) and give it another quick mix.

Drop rounded scoops of the cookie mixture (2 rounded tbsp) onto a baking sheet lined with parchment paper and shape how you liked. Aim for about 20 cookies total.

Chill for 6 hours and then enjoy!
