Our peaches smoothie is the taste of summer. Fresh, fruity and just the right level of sweet, it’s our go-to on hot summer days. Which means peaches was the first flavor that came to mind when we set out to create a recipe for another of our summer favorites: ice cream.

For the base of this ice cream, we’ve gone with canned coconut milk – the type you’d purchase if you were making a curry. It adds the rich creaminess that all good ice cream needs, and the subtle sweetness pairs perfectly with the flavors packed into our peaches packets – peach, strawberry, and rhubarb. Brown flax seeds bump up the protein, as well as adding fiber and omega-3 fatty acids.

This is a no-churn recipe, so you don’t need to worry about taking it in and out of the freezer. Just pop it in the night before, and it’ll be ready to eat the following day.

This recipe takes just 10 minutes to prepare before it's ready for the freezer.

Ingredients

2 packets of peaches

2 cans of coconut milk, chilled overnight

¼ cup liquid sweetener of choice

2 tsp vanilla extract

2 small peaches, diced

Instructions

Chill 2 cans of coconut milk in the fridge overnight.

Peel 1 small peach and 1 small plum, and dice into small pieces.

In a blender, combine coconut milk, kencko packets, liquid sweetener and vanilla and blend.

Add the chopped peach and plum and gently fold through the mixture before pouring the entire things into a freezer safe container lined with parchment paper.

Freeze for 8 hours, or overnight.

Take it out of the freezer 5 - 10 minutes before serving so it softens slightly.
