If you’re not already familiar with the joys of pumpkin bread, let us introduce you. If you are, we’re so glad you’re here! Pumpkin bread is our favorite way to use pumpkin puree (just don’t tell pumpkin pie) and it’s also one of our favorite ways to use kenkco yellows. Our sunshine smoothie packet is the perfect pairing with pumpkin spice thanks to the warmth of the carrot and cinnamon.

For this pumpkin bread we’ve gone into full cinnamon fandom with a triple hit of our favorite spice – it’s in the pumpkin spice and kencko yellows, and then we added a healthy dash more just to make sure it’s cinnamon-y enough. Cinnamon doesn’t just taste like a hug, it’s also loaded with antioxidants that mean it’s a healthy hug for your body as well.

Someone once told us that the more lumpy a cake batter, the better it’ll rise, so we keep the mixing quick and easy for this recipe, which means it’s simple enough to whip up on a weekend morning or on a Sunday evening as a tasty treat for the week ahead.

This recipe takes just 15 minutes to prepare plus 50 minutes of cooking time.

Ingredients

1 1/2 cup all purpose flour or whole wheat pastry flour

1 packet of kencko yellows

2 tsp of cinnamon

1 tsp of pumpkin pie spice

2 tsp of baking powder

1/2 tsp of baking soda

1/2 tsp of salt

1/2 cup of coconut sugar

1/2 cup of almond milk

1/4 cup of olive oil

2 eggs (or flax eggs)

1 tsp of vanilla

Instructions

Preheat the oven to 350°F and line an 8x4-inch loaf pan with parchment paper. If you’re having trouble lining the tin, try scrunching up the paper before placing it in – it’ll make it much easier to fit to the shape of the tin! 



In a medium bowl, combine the flour, kencko yellows, cinnamon, pumpkin pie spice, baking powder, baking soda, and salt.



In a large bowl whisk together the pumpkin purée, eggs, sugar, milk, olive oil, and vanilla until smooth.



Pour the dry ingredients into the bowl of wet ingredients and stir until just combined, careful not to overmix.

Spoon the batter into the loaf pan and bake for 45 to 50 minutes or the top springs back to the touch and a toothpick inserted comes clean.
