We’re always looking for ways to mix up our breakfast routine and our latest obsession is these pumpkin spice overnight oats. Using our seasonal-special pumpkin spice smoothie, this recipe is like a cozy hug for your belly – just what we need when we finally make it down to the kitchen after hitting snooze a few too many times.

And like all good hugs, this recipe is good for your soul, and your body. Oats are filled with antioxidants, and soluble fiber, making them a great option in the morning. We’ve added chia seeds, not just for their nutritional benefits, but also for the creamy texture they give the oats. The choice of milk is up to you, but we’re all in on oats for this recipe so we’ve stuck with oat milk.

To finish the recipe off, we’ve added one of our all-time favorite flavor combinations, chocolate and nut butter. Our personal favorite is a slightly salty peanut butter with dark chocolate, but everything from almond to sunflower seed butter would be delicious. Whip this before bed and you’ll have a tasty reason to skip the snooze button the next morning.

This recipe takes just 5 minutes to prepare before resting overnight in the fridge.

Ingredients

1/2 cup of oats

2/3 cup of oat milk

1 tbsp of chia seeds

1 packet of kencko pumpkin spice

Your choice of nut butter (we used peanut butter, but any nut or seed butter will work)

Melted dark chocolate

Instructions

In a bowl, mix your oats, chia seeds, pumpkin spice packet and oat milk until well combined.

Transfer your oat mixture to your jar or bowl of choice, and top with a layer of peanut butter (or your choice of nut or seed butter.)

Top with a thin layer of melted dark chocolate. If you’d prefer your chocolate melty, add your chocolate after your oats have sat in the fridge overnight. If you prefer it like a chocolate shell, pour a thin layer of melted chocolate over the nut butter, and then pop your oats in the fridge overnight to set.

In the morning, they’ll be ready to eat. If you’d like, add some additional toppings – our favorites are fresh raspberries and a sprinkle of salted peanuts.
