We’re always the disembodied voice of a smoothie brand – er, we mean person – who orders the pumpkin spice latte as soon as it hits menus. In our opinion, it’s never too early for pumpkin spice. As soon as there’s even a hint of fall weather, you’ll find us putting our pumpkin spice packet into everything. It’s got all the flavors you know and love – cinnamon, nutmeg and ginger provide the spice, while pumpkin, date, carrot, apple, banana and orange pack in the sweet, comforting fruitiness.

One of our favorite ways to use kencko pumpkin spice is in these pancakes. They’re perfect for a weekend brunch, but we won’t judge you if you make them for dinner – they’re that good! The batter is a classic pancake batter made with flour, milk and eggs. You can experiment with different flours like spelt and wholewheat, but you might need to adjust the milk to get the right texture.

Choose your own adventure when it comes to the toppings. Our personal favorites are pecans, coconut flakes and banana slices.

This recipe takes 10 minutes to prepare, and just 20 minutes from starting to eating.

Ingredients

1 packet of kencko pumpkin spice



1 cup of flour

1 cup of milk of choice

2 tbsp of sugar

2 tbsp of oil

2 tsp of baking powder

1 egg

1 tsp of salt

Instructions

In a large mixing bowl, combine the flour, kencko pumpkin spice, baking powder, sugar, and salt.

In a separate bowl, whisk together the wet ingredients, the oil, milk, and egg.

Now pour the wet ingredients into the dry and stir until just combined. Don’t worry if there’s a few lumps, the less you stir, the fluffier the final pancakes will be!

In a greased frying pan over medium high heat, add about ¼ cup of pancake mix per pancake and leave it to cook. Don’t be tempted to flip it too soon – it’s ready when the surface is covered in bubbles. Once you see the bubbles, flip the pancake and cook for an additional minute.

Repeat for the rest of the batter.

Stack the pancakes, top with your favorite toppings, and a healthy dose of maple syrup and enjoy!
