PUMPKIN SPICE SMOOTHIE
Pumpkin spice is back. And at this time of year, we can’t find enough ways to sneak it into our day. Our pumpkin spice smoothie really does taste like fall – packed with pumpkin, date, carrot, apple, banana, cinnamon, orange, nutmeg, and ginger in every packet, it’s warm and cozy, but still has a hint of freshness thanks to the fruits.
It feels like everyone is obsessed with protein right now, and we’re not here to tell you that protein is the be all and end all (because it isn’t) but we are big fans of a balanced (and delicious) snack – these hit the mark. The protein in these bars comes from protein powder as well as the oats and almond butter.
These bars are no-bake which is as awesome as it sounds. You literally just mix all the ingredients, except the glaze, together and press them into a dish. Stick ‘em in the fridge and wait a few hours and boom, you’ve got yourself some protein bars.
This recipe takes 10 minutes to prepare and just 20 minutes of total time.
Ingredients
1/2 cup of oats
1/2 cup of vanilla protein powder
3 tbsp of chia seeds
1 kencko pumpkin spice packet, divided
2 tbsp of melted coconut oil
1/3 cup of almond butter
2 tbsp of maple syrup
Sprinkle of cinnamon
For the glaze:
1/3 cup of white chocolate chips
1 tbsp of melted coconut oil
Remaining pumpkin spice powder
Instructions
Grab yourself a bowl, dump in all the dry ingredients excluding the glaze ingredients. We’d suggest leaving just a pinch of pumpkin spice in its packet (you’ll find out why at the end!).
Now add in the wet ingredients,( again, excluding the glaze ingredients) and stir thoroughly. If it still looks a little dry, try adding bit more almond butter to hold it together.
Once everything is mixed, and it’s just starting to clump together, pour it into a lined dish and press the mixture down until it forms a solid base. The smaller your dish, the thicker the final protein bars – we like ours chunky! Put the dish in the fridge while you prepare the glaze.
The glaze is super easy – simply melt the coconut oil and white chocolate together until runny. This could be done in the microwave or in a bowl over hot water.
Take your dish out the fridge, pour over the glaze mixture, and spread it evenly. Here’s where that pumpkin spice packet comes into its own – sprinkle it over the glaze to create a fun decorative topping.
Put the whole thing back in the fridge. It’s ready to cut into bars once the glaze has hardened.
