For this yogurt bark recipe we decided to take “eat the rainbow” literally – the result is a healthy snack that tastes as good as it looks. Creamy natural yogurt combines with two fruity flavors of your choice for an easy to make snack that looks great – the more messy and chaotic the design, the better.

This recipe is fully customisable, so follow your heart. When we fancy something refreshing and tropical, we’ll swirl blues and greens into the yogurt and top it off with coconut flakes, lime zest and fresh mango. When we want something a little more indulgent, crimsons and beet reds make a perfect pair. Top it off with chocolate chips and granola and you’ve got yourself a delicious sweet snack.

While we can’t promise there’s a pot of gold at the end of this yogurt rainbow, you will feel a million bucks after eating this fresh and fruity treat thanks to the protein from the yogurt and the nutrients from the fruit and veggies.

This recipe takes 10 minutes to prepare before leaving it to set in the freezer.

Ingredients

2 cups of unsweetened Greek or coconut yogurt

2 different packets of your choice of kencko

Toppings: e.g. strawberry slices, blueberries, coconut flakes, chia seeds, granola, dark chocolate chips

Instructions

Lay out two small bowls and add 1/2 cup of yogurt to each bowl.

Add one kencko packet to each bowl and mix thoroughly so the yogurt is evenly colored.

Line a cookie sheet with parchment paper, then spread the remaining cup of yogurt onto the sheet.

Drop dollops of the flavored yogurt on top of the plain yogurt, then swirl the flavors together. We’ve found that the easiest way to do this is using the handle of a wooden spoon. And don’t stress about the design, you can’t go wrong!

Top the yogurt mixture with your choice of toppings. Our favorite combination is dark chocolate chips coconut and strawberry slices.

Place the yogurt bark into the freezer for 4 - 5 hours and then remove and use your hands to break it into chunks.

Store the yogurt bark in the freezer for easy snacking whenever you’re craving a frozen treat!
